Independence Day Treats

Some of my favorite treats for the 4th of July are Sparklers and Graham Crackers w/ frosting & Sprinkles. I have made these for a few years for our festivities.
I got the idea for the Sparklers from my good friend Hollie. I have made them for several different occasions, but making them for the 4th of July is my favorite.

A childhood favorite is graham crackers with frosting. It is fun to "jazz them up" with some sprinkles for a tasty snack while enjoying the day celebrating the USA.

Thankful Gift

I sent B to school today with 3 little gifts. Last night we made some mini loaves of pumpkin bread. I wrapped each loaf and put it in a small paper bag with a tag that said "thankful". I had traced a simple leaf out of one of our fall books and cut it out from red, orange, and yellow construction paper. I attatched the 3 leaves on each bag with a small brad. On the outside I stamped the names of B's 2 teachers and busdriver. We handed the first one to the bus driver as B boarded and he told him "Happy Thanksgiving". I hope the other 2 make it to school with out getting too smashed!

Here is the recipe I used:

3 1/2 C. flour

3 C. sugar

2 tsp. baking soda

1 1/2 tsp. salt

2 tsp. cinnamon

1 tsp. nutmeg

1 C. oil

2/3 C. water

5 eggs

1-15oz. can pumpkin

Heat oven to 325-350 F. Grease bottoms only on mini loaf pans. Combine flour, sugar, soda, salt, cinnamon, and nutmeg in large bowl. In seperate bowl, combine oil, water, eggs, and pumpkin. Mix well. Add to flour mixture and mix until blended. Pour batter into prepared pans. Bake until toothpick in center comes out clean about 35 minutes. Cool 10 minutes in pan and then on wire rack.

This made 8 mini loaves and 12 micro mini muffins.
